  • 1 Tbsp Lemon juice
  • 2 Tbsp Soy sauce
  • 1 Tbsp Honey or maple syrup
  • 1 Tbsp Sriracha (Adjust to taste)
  • 1 Tsp Garlic paste
  • 1 Tsp Ginger paste
  • Salt and pepper (To taste)
  • For the Frosties Crust:
  • 2 Cups Kellogg’s Frosties (Crushed but not powdered)
  • 1 Egg (Beaten)
  • 2 Tbsp Milk
  • For the Sweet & Spicy Glaze:
  • 5 Tbsp Honey
  • 2 Tbsp Soy sauce
  • 1 Tbsp Sriracha (Adjust to taste)
  • 1 Tsp Garlic paste
  • 1 Tsp Ginger paste
  • 1 Tsp Sesame oil
  • For the Sandwich Build:
  • 2 Brioche buns (Toasted)
  • Sriracha mayo
  • Lettuce or slaw (Your choice)
  • Pickled jalapeños (Optional, for heat)
Instructions
  1. Step 1: Marinate the Chicken
    • Combine milk and 1 tbsp lemon juice for a quick buttermilk substitute; let it sit for 3 minutes.
    • Add soy sauce, honey, sriracha, garlic paste, ginger paste, salt, and pepper. Mix well.
    • Coat the chicken breasts in the marinade and refrigerate for 1-2 hours.
  2. Step 2: Coat the Chicken with Frosties
    • Crush Frosties into small bits and set aside in a shallow dish.
    • Whisk the egg with milk in another dish.
    • Remove chicken from the marinade and let excess drip off.
    • Dip chicken into the egg mixture, then press firmly into Frosties to coat evenly.
  3. Step 3: Cook the Chicken
    • Air Fryer: Preheat to 180°C. Spray the basket lightly with oil, place chicken inside, and cook for 12 minutes, flipping halfway. Ensure the internal temperature reaches 75°C.
  4. Step 4: Make the Sweet & Spicy Glaze
    • Heat honey, soy sauce, sriracha, garlic paste, ginger paste, and sesame oil in a saucepan.
    • Stir until the glaze thickens, about 3-4 minutes.
  5. Step 5: Assemble the Sandwich
    • Brush the cooked chicken generously with the warm sweet & spicy glaze for a glossy finish.
    • Spread sriracha mayo on both sides of the toasted brioche buns.
    • Add lettuce or slaw to the bottom bun, then place the glazed chicken on top.
    • Sprinkle a handful of crushed Frosties over the glazed chicken for an extra crunch and a hint of sweetness.
    • Finish with pickled jalapeños (if you’re feeling spicy) and crown it with the top bun.
Note

Customise the Heat: Adjust the sriracha in the marinade, glaze, or mayo to your preferred spice level.

Alternative Glaze: Try adding a pinch of chili flakes for an extra kick.

Leftovers Tip: Slice leftover chicken for salads or wraps – the glaze keeps it moist and flavourful.
