EMBER Pork Belly Lollipops with Bright Orange Pepper Drizzle, Crackling Crumb & Spring Onion
This one stopped me in my tracks.
Without a doubt, this is the best thing I’ve ever cooked in my 5-year BBQ journey. I’m not even exaggerating. It completely shocked me.
Sticky, smoky pork belly cooked low and slow with @fourge.bbq EMBER rub, braised until tender, skewered, dunked in glaze and tacked back up on the @ninjakitchenuk FlexFlame until it went dark, glossy and savage. Then finished with that bright orange pepper drizzle, crackling crumb and spring onion.

Honestly, this cook had everything. Smoke. Stickiness. Crunch. Colour. And that EMBER rub did exactly what it was built to do.

What if @fourge.bbq sold sausages?
Better yet . . . what if we handed over the keys to the castle and gave you the mix, method, and know-how to make them at home?
@liamthecateringbutcher been busy behind the scenes, tinkering with what a first FOURGE sausage could look like and taste like. Built from a proper pork base, layered with smoke-led seasoning, jalapeños for a clean kick, and cheese through the mix for that rich, molten hit. He’s now on test batch three and it’s landing hard.
Today I got to sample them. And honestly? They’re 95% there already. Tight skin. Great bite. Solid heat. Big flavour. Proper special.
So here’s the question for you lot . . .
Would you rather buy these ready-made from the award-winning @thecateringbutcher ?!?
Or should I get Liam to download his brain into a proper set of instructions and build a FOURGE kit you can fire up at home?

Yesterday my eldest said he wanted to go camping again . . . but after I’d dropped my other two off at their Nan and Grandad’s for a couple of days, it was already gone 4pm by the time I got back. So we needed somewhere fairly local . . .
We found @woodfarmcampingglamping and booked in for 5pm. When we arrived, Tim gave us a cracking welcome and, as it was a bit quieter, let us pitch right by the lake . . . what a spot. Honestly, probably some of the best views we’ve had so far whilst exploring Lincolnshire.
We got set up, walked the dog, then fired up the Weber and cooked some burgers over the coals. It’s been a VERY long time since I haven’t made smashburgers and just gone with pre-made burgers over the flames . . . but dare I say it . . . I think I actually preferred them.
We then just sat there chatting, listening to music and enjoying some proper quality time together.
Tim’s wife, Keziah, was lovely too, and clearly working flat out keeping the showers and facilities spotless.
Proper nice little site if you like small, friendly campsites, peaceful views and maybe a bit of fishing . . . and yes, you can even stay in a converted double decker bus too.
Just two more weeks and I’ll be back with my BBQ family at @millington.hall.farm for the Community Cookout 2026 and I honestly cant bloody wait!

This morning I headed over to @lincoln_bbq_shop to check out their new site and have a chat about whether they could help restore my KJ, which has definitely seen better days.
As soon as I opened the door, the place was honestly full of people browsing the range and picking up bits. It’s genuinely great to see a local business benefiting from the growing interest in outdoor cooking here in Lincolnshire.
I picked up some fuel while I was there, and I’ve also made plans for the legend that is Owen to pop over to mine one evening to fit a new gasket and replace a few bits that got damaged during the house move.
If you’re in Lincoln and into cooking outdoors, you need to get yourself down to this place.
Stayed over at @lazybuzzards22 last night with the three kids and Wren in the TentBox ⛺️🐾
Being Easter holidays, we wanted to get out in it a bit more, and this trip had two goals really . . .
First — would we still have a good laugh on a site with not much more than a toilet and shower block?
Second — could I actually fit three kids, a dog, food, drinks, games, Starlink, power banks, lights and everything else needed for a comfy night away into one car without looking like I was moving house?
Somehow . . . yes 😅
And to be fair, it proved you don’t always need loads on site to have a cracking little getaway. Bit of fresh air, simple set up, kids happy, dog happy, job done.
What I didn’t expect though . . . turns out this place has its own BBQ competition scene too 👀🔥
So now I’m curious . . . who’s heard of the comps there before?
And more importantly . . . who’s up for entering next year? 😜

Had to give the local lads a shoutout tonight 👊
Went for the Mighty Meaty from @bunsontherunconingsby , just outside The Castle Pub — loaded with smoked bacon cheese, smoked sausage, pulled pork and crispy onions. On the side I had magic dusted fries and a mac n cheese, so this definitely wasn’t a light tea 😅
Now sure . . . I can cook up a pretty decent smashburger at home 😏
But it’s important to support local businesses too, and the three guys running this place are top lads. Even better, their food backs it up as well.
I always try to support local independents and any UK BBQ business I can. We all need to do our bit and back the people out there grafting, because that support matters.
