Total Time: 1 hour 15-25 minutes (plus overnight marinating)

Ingredients:
- 1kg lamb mince (20% fat)
- 2 teaspoons flour
- 2 teaspoons dried oregano
- 1 teaspoon Italian herbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cayenne pepper
- 2 teaspoons smoked paprika
- 1 teaspoon cumin
- 4 tablespoons Greek yogurt
- 2 cloves garlic (whole)
- 2 small onions (whole)
- 2 teaspoons salt
- 1 teaspoon black pepper
Blend for Smoothness:
Combine all ingredients in the Ninja 3-in-1 Food Processor and blend to a smooth paste.
Shape & Marinate:
Form into a log, wrap in foil, and refrigerate overnight.
Pre-Cooking:
Leave wrapped in foil, allow to sit at room temperature for 30 minutes.
Bake:
Preheat Ninja Woodfire to Bake mode at 150°C. Cook until internal temperature reaches 70°C (about 40 minutes).
Roast for Colour:
Remove from foil, roast at 220°C for 10-15 minutes, turning occasionally.
Final Prep:
Stand upright, slice into thin strips. On a high-heated flat plate on the Woodfire, toss the strips to add colour and texture.
Serve:
In lightly toasted flatbreads, with a salad and kebab sauce.
