Imagine juicy chicken quarters hanging out overnight in a zesty marinade, getting all cosy with Aleppo chili flakes and a dash of honey. Then we fire them up in the Ninja Woodfire, adding those sweet cherry wood pellets for a smoky kick. The result? A lip-smacking, finger-licking good chicken that’s perfect for your next backyard bash or a chill dinner with friends.

Ingredients:
- 4 chicken leg quarters
- 4 tbsp olive oil (for its flavour and heat resistance)
- 4 tbsp lemon juice
- 2 tsp Aleppo red chili flakes (for a unique, moderately spicy and slightly fruity flavour)
- 2 tsp smoked paprika
- 2 tsp black pepper
- 2 tsp salt
- 2 tbsp minced garlic
- 4 tbsp finely chopped coriander
- 4 tbsp dark soy sauce
- 2 tbsp white vinegar
- 3 tbsp honey or brown sugar (for added sweetness)
Prepare the Marinade:
Combine olive oil, lemon juice, Aleppo red chili flakes, smoked paprika, black pepper, salt, minced garlic, coriander, dark soy sauce, white vinegar, and honey or brown sugar in a large bowl. Whisk until well mixed.
Marinate the Chicken:
Thoroughly coat the chicken leg quarters with the marinade. Cover and let it marinate in the refrigerator overnight.
Preheat Ninja Woodfire Oven:
Set to air fry mode at 190°C (374°F). Add sweet cherry pellets to the smoker box for a smoky flavour.
Cooking Preparation:
Place the marinated chicken on baking paper, spooning over any remaining marinade.
Air Fry the Chicken:
Cook in the Ninja Woodfire Oven for 20 minutes, then flip each quarter and continue air frying for another 10 minutes.
Check Internal Temperature:
Ensure chicken is fully cooked by checking its internal temperature, which should reach at least 75°C (165°F).
Rest and Serve:
Let the chicken rest for a few minutes after cooking. Serve hot with your choice of sides.
