🍗🔥 Sneaking out for a bit of peace and quiet! Just me, the great outdoors, and a chicken that doesn't ask a million questions.

Whipped up this beauty on the @ninjakitchenuk Woodfire – only took 45 mins!

Air-dried the bird overnight in the fridge (bit like me hiding from the chaos), then gave it a quick spa treatment with olive oil, salt, and pepper. Cranked it up to 250°c with a bit of cherry smoke for a fiery 10 mins, then dropped it to 180°c. The MEATER was beeping its head off – job done.

Nothing fancy, just a cheeky, chill cook in the freezing cold. A man, his grill, and a brief escape from "Dad, why is the sky blue?" 🔵🧒

Today, we’re bringing the heat with some succulent charred lamb chops, blistered bell peppers, and crispy potatoes - all cooked to perfection in the new Ninja Woodfire Outdoor Oven. Huge shoutout to @ninjakitchenuk for this game-changing piece of kit! 🙌

Here’s how you can recreate this epic meal:

Charred Lamb Chops:

• Season your lamb chops with a mix of garlic, rosemary, thyme, olive oil, salt, and pepper.

• Preheat your Ninja Woodfire Oven to a roaring 370°C on the bake setting.

• Place those chops on the grill, flipping once, to get that perfect char. It’s all about that smoky flavor!

Blistered Bell Peppers:

• Slice your bell peppers and toss them with olive oil, salt, and a pinch of smoked paprika.

• Grill them until they’re beautifully charred and tender. Trust me, it’s a game changer.

Crispy Potatoes:

• Parboil some chunky potato wedges, then give them a shake for that rough edge. Toss with olive oil, rosemary, and garlic.

• Spread them out in the Ninja Woodfire Oven and roast until golden and crispy.

This trio is more than just a meal - it’s a Mediterranean journey in your mouth.

We don't let a bit of British weather dampen the BBQ spirit eh! And speaking of spirits being lifted, the good folks at @properoni_uk sent over a few packs of their Properoni and Chorizo for me to try out – and blimey, they're a game-changer!

I've rustled up something special: Hasselback Potatoes with a smoky twist, each one hugged by slices of @properoni_uk Properoni that gets all crispy and lush on the grill. And for the pièce de résistance, Chicken Thighs basking in a glaze that's got a kick, thanks to their Chorizo. It's a duo that'll have you singing in the rain!

As I was flipping through my BBQ snaps from the year, I realised it’s been a cracking ride from grill novice to, well, a less clueless grill novice! It’s been a saga of flame-kissed victories and a few smokey defeats (cue the ‘smoke alarm symphony’). Big love to the BBQ crew for being the real MVPs.

Now, drumroll please… next year’s big goal: taming the mighty brisket! It’s about time, right? And hey, while we’re dreaming big, why not throw a BBQ shack into the mix? Imagine the chaos I could cook up in there!

Ah, the humble Chicken Parmigiana courtesy of my Ninja Woodfire @ninjakitchenuk

Ingredients:

• 3 large chicken breast fillets, halved horizontally

• 2 eggs, 2 cloves garlic (minced), 2 tbsp fresh parsley (chopped), salt & pepper for marinade

• 1 cup Panko breadcrumbs, 1 cup standard breadcrumbs, 1/2 cup fresh grated parmesan, 1 tsp garlic powder for coating

• For sauce: 2 tbsp avocado oil, 1 large onion (finely chopped), 2 cloves garlic (minced), 400g passata, 2 tsp dark muscovado sugar, 1 tsp Mediterranean seasoning, salt & pepper

• Mozzarella cheese slices for topping

Method:

1. Airfry Chicken: Preheat Ninja Woodfire to 180°C. Spray chicken with canola oil, airfry for about 15 minutes, flipping and spraying again halfway.

2. Top & Bake: Slather chicken with sauce, top with mozzarella, bake at 160°C in the Woodfire until cheese is melted and bubbly.

Ever had a bean dish strut across your BBQ spread like it owns the place?

Enter my Epic Pit Beans - they’re not just a side dish, they’re the meaty extravaganza that steals the show!

Recipe below for those daring to recreate the magic!

Ingredients:

1 Pack of bacon (candied)
1/2 Diced onion
2 Garlic cloves, finely chopped
2 Tbsp Ketchup
2 Tbsp BBQ sauce
1 Tbsp Brown sugar
1 Tbsp Honey/mustard BBQ rub
1 tsp Worcestershire sauce
2 Cans baked beans
1 tsp Smoked paprika
1/2 tsp Cayenne pepper
Salt and pepper to taste
1 cup Leftover pulled pork

Instructions:

1. Fire up the BBQ to a medium heat.

2. Sauté onion until translucent, then stir in garlic, ketchup, BBQ sauce, brown sugar, BBQ rub, Worcestershire sauce, smoked paprika, cayenne, salt, and pepper.

3. Now, toss in the baked beans, pulled pork, and half the candied bacon. Give it a good mix.

4. Place on the BBQ, cover, and let it simmer for about 1 hour, stirring occasionally.

Fancy a smoky hit? Uncover and cook for another hour with some wood chips on the coals.

5. Stir, crown with remaining candied bacon, cover, and let it mingle for an additional 15 minutes.

6. Serve warm and let the BBQ compliments roll in!

Introducing my latest creation: Char Sui Beef Short Ribs. A fusion so delightful, it’s like the Beatles met Jackie Chan for a BBQ jam session. 😜

These beefy beauties, courtesy of @whthomas_butchers have been lovingly seasoned with the ‘China Town’ rub from @norfolk_smoke_pit And let me tell you, this rub is a game-changer! Packed with oriental flavours, it promises to elevate your ribs to mouth-watering heights.

Cooked on the Kamado Joe Classic 3 from @bbqs2u fuelled by the Big Block (also from @bbqs2u ), and kissed by the sweet, smoky embrace of cherry wood from @planetfriendlyfirewood these ribs are a testament to what happens when East meets West on the grill.

Now, I won’t give away all my secrets here, but let’s just say there’s a bit of apple cider vinegar, water, and bourbon involved in the spritzing. And for those of you with a sweet tooth, there’s a ‘China Town’ infused plum sauce that’ll knock your socks off!

When Oscar, my eldest, gets that glint in his eye and declares he’s commandeering the BBQ, you best believe I step aside and salute! 🍔

Out comes the @ozpiguk BigPig (mind you, after a ‘little’ scrub - it’s had a lazy spell).

With his @buckle_and_hide_uk apron on, he looked every bit the BBQ Avenger, ready to save us from our hunger. And those tongs? Clicked more times than a teenager’s Snapchat.

No final photos of the meal this time – our tummies took precedence! Just pure magic, lad feeding the troops after a garden adventure. 🍃 #

So, I’ve been at it again, firing up the grill and diving into a bit of a steak extravaganza. 🍖🔥

Firstly, hats off to @villagebutchers for that top-notch Bavette Steak. Paired with some creamy Monterey Jack and a zingy roasted red pepper sauce, it’s a proper treat for the taste buds.

Now, a couple of classic Lee moments:

First BBQ since the holiday and that covid interlude... and halfway through, I realised my trusty BBQ gloves might still be in Cornwall. So, erm, sorry to the wife for the t-towel casualties. My bad!

As for the missing glam shot of the dish? I had it all set up, different angles, plate spins, the lot. Even sliced open a steak for the big reveal... but, yep, forgot to hit record. We’ve all been there, right?

Cooked on the KJ Classic 3 from @bbqs2u it was a joy to be back at the grill. As for my butcher skills? A work in progress, but we’ll get there!

Quick Recipe Rundown:

Bavette Steak slathered in roasted red pepper sauce.

Back from a brilliant holiday in Cornwall with the family, and I’ve got to give a shoutout to my trusty travel companion: the Weber Go-Anywhere Charcoal Grill! After asking around for the perfect portable grill, I got a ton of recommendations for this beauty and decided to snag one for myself from Amazon. Best. Decision. Ever.

Made a cheeky mod by cutting the grill grates in half, turning it into a BBQ Mary Poppins bag. Managed to pack all my BBQ essentials inside and off we went! 🚗💨

The control on this grill? Absolutely top-notch. Managed to smoke some baby back ribs using cherry chunks, and they were the talk of the holiday. 🍖🍒 Its portability? A dream. Took it from the beach to our chalet with ease.

All in all, a solid 9/10. A built-in thermometer and pre-cut grates would make it a perfect 10. If you’re a BBQ enthusiast on the move, this grill’s a game-changer.
