This savoury, smoky, and sweet condiment is the perfect addition for any burger or grilled meat.

Let’s do this . . .
The Ingredients
Prepare by getting the following ready:
- 450g Bacon – diced
- 1 Onion – diced
- 3 Cloves garlic – minced
- 125ml Apple cider vinegar
- 100g Dark Muscovado sugar
- 60ml Maple syrup
- 60ml Black coffee
- 1 Teaspoon sweet paprika
- 1/4 Teaspoon cayenne pepper (optional)
The Cook
Place the Ninja Griddle Plate on the grill plate and close the lid. Select the ‘GRILL’ function and set to HI for 25 minutes.
Once preheated add the chopped bacon and cook until it’s nice and crisp at which point remove and place in a bowl for later (leave the rendered fat behind)
Next add the onion and cook until it’s soft – about 5 minutes
Reduce the heat to MED and add the garlic and cook for an additional minute.
Add the vinegar, Muscovado sugar, maple syrup, coffee, paprika, and cayenne pepper (if using) to the griddle plate and stir to combine.
Bring the mixture to a boil and then reduce the heat to LO.
Stir occasional and simmer until the mixture has thickened and reduced by about half at which point add the bacon back and stir to combine.
Texture and Storing
Transfer the bacon jam to a food processor or blender and pulse until it reaches your desired consistency.
Note: I leave mine chunky when using in burgers etc . . . but it’s a LOT easier to use on ribs etc if you pulse slightly first.
Transfer the bacon jam to a jar or container and let it cool to room temperature.
The bacon jam will keep in the refrigerator for up to 1 month.
