We’re smoking it up in the Ninja Woodfire Outdoor Oven with a touch of wood pellet magic, and teaming it up with some killer homemade waffles made right on our Ninja Woodfire Grill. It’s all about that perfect blend of sweet, smoky, and downright delicious.

Ingredients:
For the Sweet and Savoury Turkey Rub:
- 50g cup brown sugar
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp ground cinnamon
- 1 tsp ground black pepper
- 1/2 tsp ground cumin
- 1/2 tsp salt
For the Turkey:
- 2.3 kg bacon-wrapped turkey breast joint from Village Butchers
- Olive oil
- Wood pellets for smoking
For the Waffles:
- 240g all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 415ml milk
- 120ml vegetable oil
- 1 teaspoon vanilla extract
For the Scrambled Eggs:
- 6 large eggs
- 60ml heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
Toppings:
- Sliced cheddar cheese
- Tomato slices
- Maple syrup
- Crispy bacon bits
Instructions:
Prepare the Turkey Rub:
In a bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, cinnamon, black pepper, ground cumin, and salt. Mix well to create your sweet and savoury rub.
Season and Cook the Turkey:
- Preheat your Ninja Woodfire Outdoor Oven to 163°C (325°F).
- Rub the turkey joint with olive oil, then generously apply the sweet and savoury rub all over it.
- Add wood pellets to the smoker box for a subtle smoky flavour.
- Roast the turkey until the internal temperature reaches 74°C (165°F), which should take about 2.5 to 3 hours.
Make the Waffle Batter:
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add milk, vegetable oil, and vanilla extract. Mix thoroughly.
- Combine the wet ingredients with the dry ingredients, mixing until just blended.
Cook the Waffles on a Flat Plate:
- Place a flat griddle plate on your Ninja Woodfire Electric BBQ Grill & Smoker.
- Preheat the grill to a medium setting.
- Pour the batter onto the griddle, forming waffle-sized circles. Cook until golden brown on both sides, flipping once.
Prepare the Scrambled Eggs:
- In a bowl, whisk together the eggs, heavy cream, and a pinch of salt and pepper.
- Melt butter in a pan over low heat. Add the egg mixture and cook gently, stirring continuously, until the eggs are creamy and slightly runny.
Assemble the Sandwich:
- Slice the roasted turkey into thin pieces.
- Start with a waffle as the base, add a slice of cheddar cheese, followed by the warm turkey slices, scrambled eggs, and a tomato slice. Top with another waffle.
- Drizzle with maple syrup and sprinkle with crispy bacon bits.
